Coconut sugar is derived from coconut sap or toddy, locally known as “tuba” in the Philippines. When freshly gathered, coconut tree sap is oyster white in color and is inherently sweet. In the Philippines, most of the consumer use coconut sugar rather than conventional sugar because of the health benefits it gives. Especially now, due to the COVID-19 pandemic, Filipinos are more health-conscious, thus there has been an increase of 30% in the demand from the local market as compared to conventional sugar. There is a projection of an increase of more than 50% by 2022.
