Australia's crystal crab is one of the most sought-after crustaceans in the world, fetching more than the US $215 per crab.
The crystal crab is found 80 km off the coast of Western Australia at depths of 800 meters. They are pale white in color, with distinctly shorter walking legs, and can weigh more than two kilograms. That is more than four times the average size of a blue swimmer crab.
The price and demand of this uncommon species have remained unchanged despite COVID-19, with 90 percent of the catch being exported to China.
