Brazilian broken rice from waste to taste

Broken rice accounts for 12 to 15% of total Brazilian rice processing, a relevant figure for the industry. Once seen as a marginal revenue, it used to be dumped at very low prices, usually sold as dog food or sold to underdeveloped countries for human consumption, many of them in Africa. In recent years, an increasing number of food industries are applying broken rice in their formulas, such as pet food, breweries, rice snacks, and rice flour, narrowing the price gap. It is currently sold at 60% of the price of white rice, which makes it a less attractive alternative for exports than it used to be.
