For the MGO800+ and higher categories, this honey is in high demand but short supply. Only very pure Manuka with high activity potential will reach these MGO levels and only from certain regions. It also varies with seasonal factors.
We can potentially get it one year but not the next. Then the honey takes a number of years (under ambient conditions) for it to mature or grow out to maximum MGO activity level following its extraction. This leaves beekeepers in a cash flow squeeze and usually they can't hold onto the stock to mature it to the highest MGO potential and sell it to the big industry players shortly following its extraction.
