The sweet potatoes in Portugal are cultivated in an IGP area (Indication of Geographic Protection). The IGP label shows the quality or reputation of the food and links it to the place or region where it is was produced. The potatoes are grown in the coastal area, in a national park, and the growers do not use fungicide for curing. The curing process takes two weeks in different temperature rooms and is always protected from light.
