The fat content in Coho Salmon is higher than that of Atlantic Salmon from Chile but lower than that of Atlantic Salmon from Norway. On average, a Coho salmon has 7 g of total fat per 100g of flesh, compared to the 5.65 g of total fat in a Chilean salar and 10 g of total fat in a Norwegian Salar.

When used to smoke, the Coho Salmon has more handling tricks when compared to the Norwegian Atlantic Salmon, which has low fat content and the meat is much softer and lax.

This difference between Norwegian Atlantic Salmon and Chilean Atlantic Salmon in terms of fat content is mainly due to different diets during the production cycle.
