FATTORIA DI SAN LEO is one of the most ancient Farms in the surrounding of Arezzo Tuscany.
Our Farm produces only fully organic products and, among these, the wine to be found in the cellars of the FATTORIA DI SAN LEO is not the result of modern techniques which involve the elaboration of various blends of adulterated vines, but is the outcome, quite simply, of the natural fermentation of the must obtained from the pressing of the grapes.
Following the most ancient tradition of rural Central Tuscany – rather than in compliance with the techniques set down by the law – this fine, red- coloured wine with its typical dry taste, is obtained from the grapes of Sangiovese, Malvasia and Trebbiano Toscano vines which are pressed, then left to ferment naturally for a few days before they are finally “processed” with fresh must. This is how one obtains that world-famous product known as Chianti wine.
But the wine made at the FATTORIA DI SAN LEO is not only a local but also genuine product: which is being aged in cask of bay oak, the wine is never subjected to any chemical treatment nor is it altered with natural additives. Once maturation has taken place, it is transferred from the casks into glass containers, allowing it only to pass through cardboard filters and through a cooling process which purify it of its bacterial flora without changing any of its inherent qualities. Within the cellars of the FATTORIA DI SAN LEO quality is always synonymous with simplicity and tradition.
This method is the same since more than 70 years.
