CAMPO DEL SASSO is made from Trebbiano Toscano grapes the same used by Baron Ricasoli in the blend of Chianti to soften the roughness of Sangiovese. Despite all its coarseness and its sour taste, our Trebbiano Toscano 'in purezza' is however an excellent result of simplicity and genuineness, rather rare in white wines, which we manage to achieve through organic methods and a very low quantity of sulfur dioxide. VIN SANTO DEL CHIANTI DOC ORGANIC MAESTA' DEL BAGNO

Simple ingredients and a few abifing rules create our Vin Santo "Maestà del Bagno": harvesting an accurate selection of organic grapes ("uva scelta") Malvasia Bianca with a small quantity of Trebbiano and Canaiolo, made dry until after Cristmas, crushed and put in small barrels ("caratello") to mature with the precious "madre". After four years of ageing in the loft of our farm ("Vinsantaia") through the natural course of the seasons and iterated fermentation, we get that fragrant blend worldwide known as the original Vin Santo Toscano. With no treatment, it is then bottled. In the traditional Tuscan cuisine Vin Santo is a regular accompaniment to dessert. To be served room temperature.

GRAPESEED OIL ORGANIC

Our grape seed oil is produced entirely on the farm from the organic grapes of our vineyards. The grape seeds are extracted during the fermentation of the must in the delestage phase. After washing with water to remove the acid residues, they are dried up to a humidity residue of 7%. The oil is extracted by continuous mechanical cold pressing without the use of solvents. The oil obtained is not subjected to any refining process
