Seed of Chinese origin that is adapted and produced in Spain. It usually has thick calibers and a large number of internal teeth. Semi-dry consumption. Its head is large and flattened and white with purple streaks on the outside. It has 10 to 12 teeth, straight and covered by a túnica of a little intense pink color. It has an average intensity of flavor to contain less allicin. They are collected at the beginning of June, hence the name "spring".
It is the most internationally known variety. Its conservation is excellent. Its head is medium size, with 8 to 10 teeth of small or medium size, with a half-moon shape and yellowish-white flesh. Most importantly, its skin on the outside is white but the inner tunics are of an intense purple color. It has a more spicy taste and a more intense flavor, due to its high allicin content. Within the group of purple garlic there are many varieties. One of them is the famous "Morado de Las Pedroñeras", which due to its special characteristics has the "Protected Geographical Indication" quality badge. They are collected at the end of June.
