Tasting notes: gelatinous, dark purple, almost black. Upon opening, you can immediately smell the onions, then the smell of vinegar and the delicate smell of bay leaves stand out. It has a strong sweet and sour taste;
Pairings: onion jam goes perfectly with cheeses, enhancing their taste, without overpowering their aroma. The cheeses suitable for this jam are those with medium/slow maturation and flavor such as pecorino, parmesan, provolone or smoked cheeses in general; it can also accompany various types of meat, preferring flavorful ones such as pork, game or venison, better if roasted;
Production techniques: after being cleaned, the onions are left to macerate with vinegar and sugar.
The following day, they are cooked at a low temperature with the maceration liquid. When the product has lost all its liquid part, has reached a golden color and a gelatinous consistency, the jars are filled. The jam is pasteurized, ensuring the preservation of the product;
Handling and storage: store the product away from sources of light and heat in hygienic environments at a maximum temperature of 33°C. Avoid overturning the packaging and check the condition of the packaging in the event of overturning. If the packaging is not intact, send it for disposal. After opening, store the jar in the refrigerator at +4°C;
Packaging materials: the product is packaged in transparent glass jars intended for food use. The lids are made of steel with a food-grade rubber membrane that ensures the watertight seal of the package and prevents direct contact of the product with the metal. The packaging material is reusable and does not contain plastic. The packaging is recyclable;
