Sensory profile
Bottled in September 2023, after one year in 25 hectoliters wood barrel. Intense ruby red color, with amaranth nuances To the nose, it’s sharp, but not invasive. You can smell red ripe fruits, a spicy scent and a good, clean presence of tertiary scents. On the palate, you can detect a well-balanced combination of tannins and acidity, paired with the typical sapidity given by the land of Hight Piedmont.
Food pairings
Recommended with meat-based appetizers and meat and fish carpaccios. A classic companion for fresh pasta, even better if stuffed, or with roasts and braised meats. Feathered game is also a good fit.

Sensory profile
Bottled in September 2024, after at least 20 months in tonneaux. Intense and sparkling red color, with amaranth nuances. The bouquet is distinguished by coffe and cocoa, we can also percieve notes of ripe red fruit and spicies, with a prevalence of cloves and pepper. The mouthfeel is broad, well balanced and round. In this full-bodied red wine che can find the typical acidity of Upper Piedmont that enriches the mouthfeel and balances the tannins, leaving the mouth "clean".
Food pairings
In order to fully appreciate the potential of this wine, it must be paired with structured dishes; if you opt for cold cuts, they should be well-seasoned. It goes well with fillet and cut beef, better if rare cooked. It can be paired with roasts or braised, even if it gives his best paired to game, especially with wild boar. When presenting cheeses, opt for products that have aged for a medium-long time, such as Toma, Castelmagno, or spicy Gorgonzola.

Sensory profile
The grapes are harvested later than usual and left to ripe longer. The results is over-ripe and slightly wilting of the grapes. This process, from wich derives the “late harvest”, increase the sugar level and favours the development of the typical aromas. Bottled in august 2022, after one year in steel, it shows a vivid purple colour with bright glares. The olfactory examination shows nuts, dried apricots and cremè paticiére scents. You can taste the typical flavors of the Croatina, softened by the unique production methos. The sip is enjoyable, with a light sugary leftover that encourages to taste it again.

It is suggested at end of a meal, with cheeses (better if aged), biscuits and chocolate based deserts

Winemaking method
Hallé Rosé is made with the first ripe Nebbiolo grapes, to preserve the best acidity and the right level of alcohol potential. The Nebbiolo grapes are separated from the stalks, then sent straight to a low-pressure pneumatic press for a soft pressing where it stays for a two-hour maceration, with dry ice to keep the temperature as low as possible, which helps preserve Nebbiolo aromas. Skins and juices are in contact only for a few hours, to achieve that unique, delicate antique rose nuance that makes this wine so distinctive. The must is then filtered from the skins and ferments in steel tanks at controlled temperature.
Second fermentation
The Hallè Rosè undergoes the second fermentation in bottle, according to the Classic Method sparkling wine making process (we were the first to produce this type of wine in Northern Piedmont).
Food pairings
Excellent aperitif, but also an interesting alternative to serve throughout a fish or poultry meat.

Sensory profile
Fermentation at low temperatures and storage in steel tanks, with bottling within six months since the harvest. Rosy in color, with the "onion skin" orange reflections typical of Nebbiolo. The scent is that of citrus fruits, rose and fresh red fruits that persist for long in the glass. There is a fresh mouthfeel, accompanied by good minerality, enhanced by the rosé vinification.

Certified SQNPI (National Integrated Production Quality System) this wine respects a voluntary production system able to ensure the consumer that products are grown with techniques that respect the environment and human health. This mark characterizes agricultural and agro-industrial products whose production methods are in conformity with the technical standard of integrated production which is defined as follows: "The agri-food production system uses all the means of production and the defence of agricultural production from adversity, aimed at minimising the use of synthetic chemicals and rationalising fertilisation, while respecting ecological, economic and toxicological principles".
Food pairings
Excellent aperitif if it is paired with fresh cured meats and baking. It’s perfect with risotto. For second courses, however, a pairing with fish or white meats is preferable. If served with cheeses, you can choose both fresh and medium-aged products such as Toma or Gorgonzola.

Sensory profile
Steel tanks, low temperature fermentation and stocking to preserve the perfumes of the grapes. It’s bottled within six months since the harvest. A straw-yellow colour, bears green grassy hues and shows lemon, apple, and hay scents. Persistent smell of white flowers and hazelnuts. You can taste a good sapidity, balanced with a good acidity.
Food pairings
With fish and meat appetizers, it’s perfect with pasta dishes, rice or baking. If paired to main courses, shellfish, and any kind of fish, mainly salmon, tuna or swordfish. If you have meat, poultry, pork, or beef are a good pairing only if not prepared with long or elaborate cookings or cured with spices that may cover the characteristics of the wine.

Sensory profile
Before bottling, our Vespolina has been aging in steel tanks for no more than one year. The purplish red colour is tinged with burgundy nuances. This cellar process preserves the fragrance of grapes and fresh fruit. The bouquet is woven by red apples, violet and black pepper scents. Vespolina is a straightforward wine. Tannins and acidity pair up to give ilfe to a complex, decisive wine, dispite its youth.
Food pairings
Vespolina will pair well with aperitizers, but also whole menus of fresh cured meats, risottos, and beef or pork dishes. With its distinctive acidity, this wine will fare well with fish, especially salmon, tuna, or swordfish. For cheese courses, the best choice is a fresh or semi-mature product.
