Baby corn or 'candle corn' is a young finger-like unfertilized cob of maize that is harvested early while the ears are very small and immature. It can be eaten raw or cooked. Baby corn is known for being rich in proteins, vitamins and iron; and is also one of the richest sources of phosphorus. Besides, since it is rich in fibrous protein and easy to digest, it is used extensively the preparation of baby foods.
