Cassava provides higher starch content during the dry season

Although cassava is a year-round crop, it provides a higher starch content during the dry season of the Brazilian winter. Most of the harvest occurs from May to November, a period in which most industries operate at full capacity. On the other hand, the increase in supply causes price drops. Some farmers prefer to harvest it during the rainy season, even with a reduction in the amount of starch, and thus a reduction of value.
