Cassava starch has a higher perceived value compared to maize starch in Brazil

At least in the ham and sausage industry, cassava starch is seen as a superior quality input compared to maize starch. Although cassava starch usually costs more than maize starch, this year, it is in the opposite place. The sharp increase in the price of maize seen worldwide has driven up the price of maize starch too, exceeding the price of cassava starch, which has moved much more slowly than expected. The cassava industry expects a price recovery soon, as demand tends to increase at the expense of maize.
