Ukraine is grappling with a potato surplus, leading to low prices and overcrowded storages. Despite the challenge of not being able to export to the Customs Union, the industry has positive developments, including compensation for storage modernization and increased production capacity. In 2021, two new potato processors began operations, and there is demand for more starch, a by-product of potato processing. The country consumes only 10,000 tons of starch annually, while producing 22,000 tons, with sausage factories being the primary buyers. The Ukrainian Association of Potato Producers is advocating for expanded state aid and the creation of a joint organization to represent processors' interests.
