In 2020, Mexico emerged as the world leader in fresh asparagus exports, with sales exceeding 173,000 tons, primarily to the United States. The majority of the harvest was done in four states, with Sonora being the main region. Nearly all of the exported asparagus was consumed in the US, with small quantities finding their way to Spain, Japan, and other countries. Asparagus is a nutrient-rich vegetable, containing proteins, carbohydrates, fiber, and various vitamins and minerals. The average annual consumption in Mexico was one kilogram per person.
