Russia's milk production is projected to grow by 3% in 2023, reaching 25.5 million tons, which is expected to drive an increase in the consumption of dairy products, particularly cheese and butter. According to the National Union of Milk Producers, cheese consumption is predicted to rise from 7 kg to 7.21 kg per capita, and butter from 2.8 kg to 2.9 kg per capita by the end of the year. There is potential for butter consumption to reach 3 kg per capita in the future. The head of the Center for Industry Expertise of the Russian Agricultural Bank, Andrey Dalnov, highlights the potential of milk processing into products with a longer shelf life as a key to market balance. Exports of Russian dairy products, mainly cheese, have seen a significant increase over the past decade, with over 35 countries receiving these exports.
