A new company, Imagindairy, is being set up by researchers from the University of Tel Aviv to produce a yeast-based liquid dairy product that mimics the taste, aroma, and texture of milk, but without the environmental impact and animal suffering associated with traditional dairy farming. The product will be nutritionally equivalent to animal milk and will be healthier as it will be cholesterol-free, lactose-free, and without somatic cells. The product is created by transforming yeast using modern genetic engineering. The researchers believe this product could address concerns about the environmental impact, health, and ethical issues of the dairy industry.
