Embrapa Suínos e Aves is leading a pioneering study in Brazil to develop chicken meat grown under controlled laboratory conditions. The final product, which should be ready for nutritional and sensory analysis by the end of 2023, is a boneless chicken breast fillet prototype that resembles sassami. The technology recreates animal tissues in the laboratory, providing meat similar to natural ones. The project was approved by The Good Food Institute, a non-governmental organization that finances global projects. The final product can be used for the production of unsafe foods, such as hamburgers, sausages and meatballs, or safe ones, such as fillets and steaks. The global poultry meat market has been growing and presents an estimated consumption of approximately 131 million tons in 2026. Countries like Canada, the Czech Republic, the United States, Japan, Israel, France, South Africa and Switzerland are also studying cultured chicken meat.
