Vegetable prices in China have surged by 27% on average across 286 wholesale markets since October, driven by cold weather, supply shortages, and increased production costs. The price hike affects a variety of vegetables, some of which have more than doubled in price. The surge is attributed to severe flooding in major vegetable-producing regions like Henan, Shandong, and Hebei, and high national supply weight in October. Additionally, rising costs of production materials and labor have increased the cost of vegetable cultivation, further contributing to the price increase.
