India has become the world's second-largest potato producer, with a surge in processing plants and demand for specific varieties. The Central Potato Research Institute has developed 65 improved cultivars, 23 of which make up 95% of the total potato cultivation area. These varieties are selected for their adaptability, resistance to stresses, and suitability for industrial processing. The demand for new potato varieties for processing is on the rise, both domestically and for export markets. Indian scientists are evaluating 21 potato genotypes to improve commercial yields and physiological characteristics, aiming to meet the evolving market and production demands.
