The article reports on the grain milling figures for the 2019/20 marketing year, indicating a slight increase in the average annual grinding per mill due to a reduction in the total number of mills. The data shows that the milled grains, which included soft wheat, rye, and durum wheat, remained almost stable at 8.68 million tons. The majority of the grain was common wheat, with rye making up a smaller portion. Additionally, the article discusses the production of spelled flour, with type 630 being the most common, and the mineral content of various flours, noting that whole grain flours contain more minerals due to their higher peel content.

In the 2019/20 marketing year, the total grain milling (soft wheat, rye and durum wheat) was almost constant compared to the previous marketing year at 8.68 million t. The number of mills fell by a further five mills to 186, informs the Federal Information Center for Agriculture (BZL). Due to the lower number of mills, the average annual grinding per mill increased slightly to 46,646 t. The almost 8.3 million tonnes of bread grain are divided between around 7.5 million tonnes of common wheat and 700,000 tonnes of rye. In addition, the mills ground 251,000 tons of spelled, from which around 205,000 tons of spelled flour were produced. Almost 70% of the spelled flour produced is made up of type 630. Whole grain spelled flour amounted to 44,000 t or 21%. Infographic Mills and Grinding (Image source: BLE) Most of the minerals in grain are located in the outer layers.
