In Kastamonu, Turkey, cultivation of the ancient grain, einkorn, also known as 'Hittite wheat', has commenced in the İhsangazi district. This grain, dating back 12,000 years, is grown without the use of chemicals, fertilizers, or irrigation in a region known for its production. Einkorn is a cereal product that can naturally grow without these substances, making it unique. The demand for this grain, both domestically and internationally, is high, with orders being placed before harvest. Young farmer Yasin Cigerci highlights the importance of understanding the value of health and the legacy of einkorn, stating that he markets his products under the name İhsangazi einkorn. Additionally, einkorn producer Sebahattin Ciğerci plans to increase his einkorn planting area to 70-80 decares, as he believes it contributes to the economy and employs a sustainable, natural farming method.
