In Peru, legume production is a significant agricultural activity, involving over 140,000 families and covering around 208,000 hectares. According to the Ministry of Agrarian Development and Irrigation, this production yields a total of 301,000 tons, supplying both national and international markets. The cultivation of legumes, primarily a family farming activity, generates 12.6 million wages. Over the past 15 years, there has been a significant increase in legume consumption in Peru, from 2.2 kilos to 8.2 kilos per person annually.
