In the Kumçatı region of Şırnak, farmers have begun the collective harvest of sesame, the raw material for registered Dergul tahini. This year, over 300 tons of sesame are expected to be harvested from 5,000 decares of land. Sesame, planted as a second crop in May-June, is harvested in September-October using traditional methods collectively. Farmers, along with their families and neighbors, cut and bundle the sesame with sickles, dry it in the sun for about two weeks, and then pound it. Registered with a geographical indication by the Turkish Patent and Trademark Office in 2023, the demand for Dergul (Kumçatı) tahini, prepared in historic water mills, has increased, leading local farmers to focus on sesame cultivation this year on 5,000 decares of land as a second crop.
