In 2020, Ukraine imported 7.2 tons of sturgeon caviar, spending $1.27 million, which is nearly double the amount imported in 2019. China was the primary supplier, contributing about 85% of the total volume. Other suppliers included Italy, Moldova, Uruguay, and the Netherlands. China has been rapidly expanding its commercial sturgeon farming since 2008 and produces over 150 tons of sturgeon caviar annually, of which about 100 tons are exported. The retail price of sturgeon caviar in Ukraine is high, with customs value at $175/kg and retail price from UAH 1,000/100g.
