Due to high coffee prices resulting from poor yields in major producing countries, the sale of chicory root is becoming more profitable. Chicory, one of the oldest domesticated plants with healing properties, has a long history of use, particularly in Europe where it has been grown since the Middle Ages. Today, chicory is mainly grown in the north of France, producing about 80,000 tons. It is also finding new applications in industry due to its inulin source. In 2020, France exported 14,526 tons of chicory, mostly root, and in 2019, French chicory exports were valued at $ 30.99 million.
