Hungary's Ministry of Agriculture has supported fish farmers and sellers by reducing the VAT rate on fish from 27% to 5% and providing additional funds for fish production pond maintenance, due to the importance of fish consumption around Christmas, with 40% of annual domestic consumption happening during this time. Despite these efforts, Hungarian fish consumption and production have seen a decline in recent years, with the annual consumption per capita still being lower than the European Union average. However, there will be a sufficient supply of high-quality Hungarian fish for the Christmas season, with carp, catfish, and roach accounting for 80% of domestic production. The demand is met both by domestic demand and the catering industry, with catfish, trout, pike perch, and carp being the most popular freshwater fish in the HoReCa sector.
