Mehdi Rajabi, the head of the Edible Mushroom Growers Association, has reported a 20% increase in mushroom production in the country, reaching over 210,000 tons this year. This surge is due to the high demand for mushrooms as a cost-effective protein substitute for chicken and meat. However, distribution remains a hurdle due to the perishable nature of mushrooms and inadequate distribution in all cities. To tackle this, the association plans to set up a mushroom distribution terminal, akin to a fruit and vegetable market, by 1403.
