The industry, which includes seven oyster farms producing the Japanese oyster, Grassostrea Gigas, has remained strong during the pandemic, with the main market being Casablanca. The sale of oysters is strictly regulated, requiring treatment in wastewater treatment plants or immersion in chlorine. Oysters are praised for their health benefits, being low in fat but rich in essential minerals, vitamins, and trace elements.
