Regulation protects genuine Trappist cheese

At the beginning of October, Decree 43/2025 (X. 2.) AM came into effect, which comprehensively regulates the production and distribution of Trappist cheese. The aim of the regulation is to ensure that customers only find products on the shelves that truly meet the traditional Trappist quality. The decree clearly defines the formal and sensory characteristics, so only cheese in the shape of a disc, achieving a specific taste and consistency score, can be called Trappist. The decision serves the common interests of domestic milk producers, cheese makers, and consumers, enhancing the transparency of the Hungarian cheese market. The amendment to the Hungarian Food Book precisely describes the properties that allow the use of the Trappist designation. The product can only be in the shape of a disc, and it can only bear the name if its sensory score reaches 11.2.
