The picarón, one of the most emblematic desserts of Peru and a symbol of our culinary identity, has its origins in pre-Hispanic times. In the framework of the recently established National Picarón Day (third Friday of October), the National Institute of Quality (Inacal) promotes the application of Peruvian Technical Standards (NTP) that ensure the quality, safety, and authenticity of the ingredients that bring this traditional sweet to life: sweet potato, squash, wheat flour, panela, and spices such as cloves and cinnamon. "From the Ministry of Production, we promote the application of technical standards as a fundamental tool to strengthen competitiveness, guarantee the safety of our food, and preserve the cultural value of products as representative as the picarón," highlighted the Minister of Production, César Quispe.
