Vietnam has seen a significant increase in cold water fish farming, with production rising from 95 tons in 2007 to 3,720 tons in 2020 across 25 provinces, particularly in the Northern and Central Highlands. The country is now among the top 10 sturgeon producers globally. Despite the challenges of COVID-19, there is a growing demand for domestic salmon and sturgeon products, largely consumed in major cities. However, Vietnam still relies heavily on imports to meet this demand, with over half of the market requiring imported salmon and sturgeon. Local production struggles to compete with imported prices, and the absence of a strategic plan for cold water fish farming since 2017 has led to production management issues and difficulties in planning and building for businesses.
