The honey type that commands a higher price in the market is usually the lighter forms of honey, as it is more difficult to obtain. One example of a light-colored honey is orange blossom honey.
Generally, lighter types of honey command a higher price in the market as it is more difficult to obtain. The Orange blossom honey is one example of a light-colored honey variety. The variety also has the advantage of being resistant to crystallization, which is when honey becomes more solid, lasting approximately 2-4 years before the honey crystallizes compared to Eucalyptus honey which takes 2-3 weeks.
