A two-year project, CE.SI.R.A., funded by the Puglia RDP 2014-2020, aims to enhance the cultivation and processing of the 'Amele' variety of carob trees in Puglia, particularly in Bari and Brindisi. The project brings together private companies and the scientific community to develop innovative production techniques and nutraceutical products, with a focus on eco-sustainable cultivation practices and the promotion of carob tree transformation beyond the food sector. The project will also evaluate the antimicrobial and antifungal substances in carob for controlling phytopathogenic fungi and bacteria, and will use an ultrasonic extractor for the innovative extraction of nutraceutical substances from carob beans.
