The Ministry of Agriculture, Livestock and Food Supply of Brazil has introduced a new Technical Regulation of Identity and Quality for hamburgers produced in establishments under the Federal Inspection Service. The regulation, which will be effective from the date of publication, provides several new conditions including a increase in the maximum fat percentage from 23% to 25%, and allows hamburgers to be molded into different formats. Establishments have been given a year to comply with the new regulations. The regulation does not apply to hamburgers produced in butchers, supermarkets, or establishments inspected by state or municipal services not part of the Brazilian System of Inspection of Products of Animal Origin.
