Spanish households have increased their consumption of eggs by 16.7% since 2019, which amounts to an additional 79,000 tons, equivalent to 1,253 million more eggs per year, according to the Interprofessional Organization of Egg and its Products (Inprovo). The data, coming from the Egg Consumption Observatory in Spain and released on the eve of World Egg Day, shows that this food is currently present in one out of every six breakfasts. In fact, 4.1% of home consumption occasions already occur in the morning (1.5 points more than in 2019) in a context of accelerating decline in sweet breakfasts.
