The Technological Production Institute (ITP), through the CITEproductivo Maynas, presented a vacuum packaging technique that allows preserving the traditional Amazonian juane for a longer time, without losing its flavor, texture, or nutritional value. This innovation guarantees its safety and expands the possibilities of commercialization in national and international markets. The presentation was held during the celebration of Saint John the Baptist, within the framework of the Open Loreto 2025 event. Thanks to the joint work with the Emilio Romero Padilla Institute (ISTER) and the restaurant La Mishquina, the Juane (one of the most representative dishes of the Peruvian Amazon), can now be packaged with methods that guarantee its safety and allowing its commercialization to new national and international markets.
