Turning the peels and seeds of Amazonian fruits into sustainable and functional foods is already a reality. The National Agrarian University La Molina (UNALM) will present, during its Research Week—from October 20 to 24—innovative projects that demonstrate how science can transform agro-industrial waste into opportunities for the sustainable development of the country, as part of the circular economy. Under the title "Eco-compatible solutions in value chains of Amazonian fruits with a focus on the circular economy," Dr. Eduardo Morales Soriano, from the Faculty of Food Industries at UNALM, will share the results and projections of research that revalues by-products of aguaje, camu camu, and other native fruits, promoting a green, inclusive, and circular food industry.
