In 2021, Austria saw a 5% increase in vegetable harvest, with a total of 675 thousand tons, despite a delayed start to the season. Onions remained the country's most harvested vegetable, followed by carrots and green peas. There was also an increase in the production of tomatoes, cucumbers, sweet corn, and pumpkins. However, spinach and asparagus harvests saw a decline due to weather conditions. The eastern part of Austria saw favorable conditions for cabbage and leafy vegetables, while the western provinces experienced excessive rainfall.
