He arrived with decades of experience smoking salmon and a lifelong passion for the sea cultivated by his time spent as a fishing boat captain. He now has a distinctive viewpoint because he is a fisherman and processor. Spence & Co., Ltd. has established a reputation for excellent quality and consistency that has ensured an expanding and well-regarded name in the smoked fish sector in the USA and Europe. This reputation has been made possible by his skill and the most cutting-edge high-tech equipment. Spence & Co., Ltd. specializes in the creation of Scottish-style smoked salmon and shellfish. They start with freshly caught Atlantic salmon that has been farm grown to ensure the survival of wild .

As predecessors did in Scottish estuaries and rivers, the fish is then masterfully smoked over oakwood.

Spence & Co., Ltd. has brought this ancient custom into the 21st century by operating from our custom-designed and constructed smokehouse. There are two objectives of efficiency and authenticity that are met by cutting-edge smokers, which are imported from the UK.
