Under normal circumstances, the top shell harvest in Turkey begins in May-June. This year there is not enough product in the harvest territory for an uncertain reason, but some producers believe it is due to the changing water temperatures and the weather anomalies. Government regulations allowed industrial harvests to begin on September 1st.
