A new farm in Ukraine has been operating for two years and specializes in the cultivation of Helix aspersa Müller snails, with plans to expand into a closed-cycle business encompassing snail caviar and ready-to-eat snails. Owner Ivan Osyuk is focusing on building infrastructure and reducing production this year to invest in the farm's growth. The snails are sold both domestically and internationally. The process involves growing the snails, transporting those ready for consumption indoors for a three-day period to empty their bowels, freezing, and then separating the meat from the shells.
