Agricultural engineer Miriam Vásquez Chuquizuta, president of the Association of Innovative Farmers of Ancash – Ediflor, decided that avocado could be much more than a seasonal fruit. What was once a surplus harvest is now being turned into high-quality avocado oil, which she markets under the brand NutriAvo®. Beginnings “We wanted to add value to the avocado and demonstrate that, from Santa, in Ancash, premium products can also be made,” recalls Vásquez with a mixture of pride. The motivation came from the field itself: turning a crop intended solely for fruit production into an opportunity for development for dozens of farming families. A graduate of the National University of Santa, Vásquez began in 2021 a pioneering path in her region: the artisanal extraction of avocado oil, initially for cosmetic purposes, in the laboratories of her alma mater.
