Antonio Galindo, the president of Alcachofa de España, a non-profit association with thirty members from the country's primary artichoke production areas, emphasized the need to bolster international trade connections and improve relations with importers and operators to capitalize on the current opportunity. This call to action was made during the association's tenth anniversary celebration at the Fruit Attraction fair in Madrid. The event was marked by discussions on boosting artichoke consumption in Spain, which currently hovers around one kilo per capita annually, aiming to reach Italian levels of seven kilos. There was consensus among the chefs and producers present that artichokes from Spain are of exceptional quality and have the potential to conquer the global restaurant market. Alcachofa de España is not only working to popularize the artichoke but also to preserve traditional varieties through innovation and research, with a focus on expanding the seed selection to enhance product diversity.
