The carob tree, particularly in Sicily, has seen increased demand for its seed flour, a natural thickener used in the food industry, leading to high prices and making it a profitable crop. Despite being in the Top 5 globally for production, Italy imports 90% of its raw material due to domestic production being insufficient. The carob tree can live for centuries and care must be taken during harvest to avoid damaging the flowers for the next year. However, a good production in 2021 is expected to be followed by smaller quantities in 2022 due to a severe drought.
