In the Arctic Circle's northernmost settlement, Longyearbyen, a pioneering initiative by Benjamin Vidmar of Polar Permacultures has brought about the miraculous cultivation of crops amidst challenging conditions. Starting in 2016, this enterprise has been producing a variety of vegetables, including beets, herbs, and radishes, both outdoors and indoors, powered by solar energy during the summer months. Operational from early May until early September, this project not only supplies local restaurants but also contributes to building a more sustainable and community-focused food system. As the project expands, it aims to further reduce reliance on imports and promote an eco-friendly approach to food production in an otherwise inhospitable environment.
