White asparagus, also known as the 'dragon beard vegetable' or the 'king of vegetables' in Europe, is a costly and less common vegetable in Vietnam due to its high price and limited availability. Originating from Europe and resembling mushrooms, this vegetable is grown on soft sandy soil and is known for its crunchy texture and high nutritional value, which is five times that of regular vegetables. It is rich in vitamins, fiber, protein, amino acids, and trace elements. Despite being introduced to China and grown in certain regions, its yield is low and cultivation is challenging, resulting in a high price of 20 yuan/kg. In Vietnam, the price of white asparagus is even higher than in China, selling at about 176,000 VND/bag, due to the more complex growing process.
