The article presents the results of laboratory tests on 14 samples of soft wheat flour, specifically Manitoba and Type 00, conducted by the Italian magazine Salvagente. The testing aimed to evaluate the level of pesticide contamination and protein content. The results show a significant improvement since 2019, with three out of the 14 samples showing no detectable pesticide traces and all samples having a protein content in agreement with declared values, albeit with an allowed EU error of up to 20%. The article also discusses the source of flour in Italy, where only some producers indicate the origin, and compares the pesticide use in soft wheat, which is primarily grown in the autumn-winter cycle, to that in hard wheat, which is mostly grown in the summer and requires more pesticides. The article highlights the benefits of choosing organic common wheat to avoid pesticide residues.
