French bakeries are being required to reduce the salt content in their breads and baked goods according to recommendations from the World Health Organization. Previously, the maximum permitted amount of salt was 1.5 grams per 100 grams of product, but this will now be decreased to 1.4 grams for traditional breads and 1.3 grams for special breads. Bakers will need to adjust their recipes and the French authorities will be monitoring compliance with the new regulations.
